Are you familiar with this big fish? We call it malaga. It’s big right? Bigger than may hand. Me and my 2 sisters in law cooked this. Malaga is one of my favorite fish.
2 big malaga fish
3 cloves minced garlic
1 medium red onion chopped
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp brown sugar
salt and ground black pepper to taste
1/2 cup water
2 tbsp black olives
1 stem spring onion
- Rub the fish with salt then deep-fry in very hot oil until golden brown. Set aside
- In a wok, lightly saute garlic, ginger, onions
Add the water, sugar, soy sauce, and oyster sauce, and black pepper.
Throw in the olives. Simmer for 5 minutes
- Add the fish in the sauce.
- Serve warm in a platter. Then garnish with spring onions.
- Smile and Eat well!
